Tuna Avocado Salad with Ginger Soy Dressing
Ingredients
FOR THE SALAD:
1 can 12 Oz Can, Chunk Light Tuna, Drained
3 whole Scallions, Diced
2 whole Radishes, Thinly Sliced
1 whole Red Bell Pepper, Stem And Seeds Removed, Then Diced
1 teaspoon Black Pepper
4 whole Avocados, Cut Into Halves (remove Pits But Keep The Skin On)
FOR THE GINGER SOY DRESSING:
2 teaspoons Minced Ginger
2 teaspoons Low Sodium Soy Sauce
2 Tablespoons Rice Wine Vinegar
1 teaspoon Sriracha Or Any Asian Hot Chili Sauce
2 Tablespoons Cooking Oil
1 teaspoon Toasted Sesame Oil
Preparation
For the salad:
In a medium sized bowl mix together all ingredients from tuna through pepper.
Evenly scoop the tuna mixture into each of the avocado halves. Spoon ginger soy dressing over the halves or you can initially combine it with the tuna mixture.
For the dressing:
Add all of the dressing ingredients into a medium sized lidded jar. Put the lid on tightly and shake all ingredients until slightly emulsified.
